- Two already defrosted Northern cod fillets
- 1 clove of garlic
- 100 g of cherry tomatoes, halved
- A handful of pitted black olives
- A handful of desalted capers
- Half a glass of white wine
- Oregano
- Extra virgin olive oil
- Salt
- Pepper

- In a non-stick pan, sauté the garlic in a drizzle of olive oil until golden.
- Add the Nordic cod fillets, previously defrosted, and season with salt, pepper, capers, and sliced olives.
- Pour in the white wine and let the alcohol evaporate.
- Add halved cherry tomatoes and a sprinkle of oregano. Cook over medium heat for about 10 minutes.
- Serve the cod with toasted rustic bread for a final crunchy touch.
