Ingredients

    • Two already defrosted Northern cod fillets
    • 1 clove of garlic
    • 100 g of cherry tomatoes, halved
    • A handful of pitted black olives
    • A handful of desalted capers
    • Half a glass of white wine
    • Oregano
    • Extra virgin olive oil
    • Salt
    • Pepper

Preparation

    • In a non-stick pan, sauté the garlic in a drizzle of olive oil until golden.
    • Add the Nordic cod fillets, previously defrosted, and season with salt, pepper, capers, and sliced olives.
    • Pour in the white wine and let the alcohol evaporate.
    • Add halved cherry tomatoes and a sprinkle of oregano. Cook over medium heat for about 10 minutes.
    • Serve the cod with toasted rustic bread for a final crunchy touch.
