- One already defrosted San Pietro fish fillet
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of dried chili pepper
- 1 teaspoon of whole green peppercorns
- 1 clove of garlic
- Salt to taste
- Fresh basil leaves

- In a preheated non-stick pan, heat 2 tablespoons of olive oil with whole peppercorns, chili pepper, and a clove of garlic until golden.
- Place the John Dory fillet, previously defrosted and salted, and cook over medium heat, turning it frequently, for about 6 minutes.
- Once cooked, add coarsely chopped basil leaves and a few drops of extra virgin olive oil.
- Plate the fish, garnish with two whole basil leaves and chili flakes, and serve immediately.
